The key to good coffee waffles is not to go crazy. Subtlety is your friend. If you have a favorite waffle recipe already, just add 1 Tablespoon instant coffee or espresso powder. If you don’t have either, you can sub about 2 teaspoons of brewed coffee too—just consider reducing other liquids a tiny bit so your batter isn’t too runny.
Coffee waffle recipe
Here’s my favorite:
Ingredients
- 2-1/4 C flour
- 1 Tablespoon baking powder
- 1-2 Tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon*
- 2 eggs (separated)
- 1/2 C butter (melted) or veggie oil
- 2 C milk
- 1 teaspoon vanilla
- 1 Tablespoon instant coffee/espresso powder
Steps
- Preheat and oil your waffle iron.
- In a large bowl, whisk flour, baking powder, sugar, salt, cinnamon, and instant coffee.
- In a separate bowl, beat egg whites until stiff peaks form.
- In a third bowl, mix egg yolks, melted butter, milk, and vanilla.
- Add egg yolk mixture to the flour mixture and stir well.
- Gently fold in egg whites.
- Pour onto hot waffle iron and cook!
Coffee waffle tips
You don’t have to separate and beat the egg whites if you’re in a rush, but it is definitely the secret to that crisp waffle exterior.
If you want to use 2 teaspoons of brewed coffee instead of powder, reduce the milk by 2 teaspoons, and add the coffee to the wet ingredients in step 4.
*”Cinnamon and coffee?!” I’m telling you, it works. But leave out the cinnamon if you want.
